History of Oatmeal Cookies
Oatmeal cookies have a long history and are believed to have originated in Scotland, where oats have been a staple grain for centuries. The cookies were likely a way to use up leftover oats and create a tasty, portable snack. They became popular in the United States in the late 19th and early 20th centuries, and have remained a favorite cookie to this day. There are many different variations of oatmeal cookies, including those made with raisins, chocolate chips, nuts, and other ingredients.

About my Oatmeal Cookie Recipe
This is a recipe for a classic, chewy oatmeal raisin cookie. Raisins in cookies are occasionally polarizing. You either love em or hate em but I would take this cookie over a chocolate chip cookie every day of my life. Next time I will try subbing 1/4 cup of AP flour for whole wheat because generally I like the nutty flavour whole wheat flour adds to baked goods. ​If raisins aren't you're thing try subbing chopped walnuts, chocolate chips or go with any combination you like!

Vegan Oatmeal Raisin Cookie Recipe

Yield:  16 cookies

Ingredients:

• 1/2 cup room temp Earth Balance Spread (or other vegan butter)
• 3/4 cup brown sugar
• 1 Flax Egg (1 tbsp flax meal + 2.5 tbsp water, let sit 5 min)
• 1 tsp Vanilla
• 3/4 cup AP flour
  
• 1/2 tsp Baking Soda
  
• 1/2 tsp flaked Kosher Salt
  
• 1/4 tsp Cinnamon
  
• 1.5 cups Rolled Oats
  
• 1/2 cup Raisins

Method:

1. Preheat oven to 350°F
2. Cream together butter and sugar for a few min.
3. Mix in flax egg and vanilla
4. Add flour, baking soda, salt and cinnamon to wet ingredients, mix until just combined on low speed.
5. Fold in oats and raisins
6. Shape into balls (I got 16, just depends how big you want your cookies to be) and place on a parchment lined baking sheet. Flatten the cookies, bake for about 15 minutes, or until light golden brown.
